Garbanzo Bean Curry


When feeding hungry children come noontime I need a meal that is both quick, delicious and healthy. This recipe covers that and don't be surprised if there isn't much left over. Garbanzo beans are packed with fiber and very healthy. I serve it in vegetable broth and it pretty much is like a tortilla soup.

Ingredients
1 tomato (diced)
1 can of garbanzo beans (drained)
1 tsp of cumin
1 tsp of garlic powder
1/4 cup of vegetable broth

Throw all the ingredients together in a pot and cook for about 10 to 15 minutes on medium, stirring the mix. I recommend making sure to put the spices in early otherwise the food will turn out bitter. Serve immediately.
