What the Baby Mermaid Eats: Vegan Taco



I like to experiment with different recipes and lucky enough Rosie is pretty adventurous when it comes to her food. But even I was surprised how quickly she ate this one (and demanded second's too). This is a healthy vegan recipe but something non-vegans alike can enjoy. 

Ingredients
1 8oz pack of seitan (wheat gluten)
1 tablespoon of soy sauce 
1 pinch of cumin
1 pinch of basil
handful of grape tomatoes 
2 tablespoons of guacamole 

optional
tortilla
shredded kale or lettuce

Steps
Using a pan on medium, mix the soysauce and spices with the seitan. It's important to add the spices early so the heat has time to really bring out out the flavor.  Move the mixture around until it has browned. Cut up the tomatoes and serve together with a little bit of guacamole. Easy right? And very delicious! Seitan is a wheat gluten that makes for a great alternative to using meat in a dish and it is a good source of protein too.
