I've really been trying to watch what we eat around here and work harder at making those home-cooked meals. Of course, it can be really challenging when you are constantly busy whether it be from a full-time job or wrangling a squirmy baby all day. So to make life a little easier I have found that a meal schedule really helps. It saves me trips to the grocery store every other day, not to mention money and oh yeah, did I mention sanity? In doing this I have also found myself becoming increasingly resourceful and creative with dinner creations because I don't want to waste what I bought. Just the other night I whipped up a delicious chicken curry with fresh veggies, combining zuccini and squash in a plate that I normally wouldn't use them in.
And in the process Stephen finally discovered that he might not hate all curry after all. ;)
Another thing that has really helped encourage me to start planning out our meals for the week was reorganizing the pantry. I can now open the door and quickly see what we have/don't have and plan meals accordingly. And also because to be honest, I got tired of accidentally buying the same item several times.
