Granola Bars from Scratch






I have made a lot of things in the kitchen but surprisingly one treat I had yet to try out were granola bars. The crunchy family’s staple snack, I know!  I brainstormed some ways to do it and came up with this simple recipe. You can add just about anything to your mix, for this batch I used:

 -crushed unsalted peanuts
- raisins
- white chocolate chips (not the healthiest choice, I know)
- flax seed

For the granola bar itself you will need

-       a 9x9 tin
-       1 cup of oats
-       ½ cup of flour
-       1/3 cup of honey or dark karo syrup
-       1/3 cup of sugar
-       a little bit of vanilla extract (I just used a small capful)
-       half a stick of  softened butter
-       a tsp of baking powder

*note: These measurements don’t have to be exact. I didn’t measure everything precisely with mine and they turned out great.

Mix all of the ingredients well (there should be no clumps of butter). You can use clean hands to just mix it all together, don’t forget to add whatever else you want to mix in (raisins, nuts, etc) too. Lightly grease pan and pack mixture in it. Our oven bakes hot so I set it at 325 and put it in for 11 minutes.

When it’s done, let it sit at room temperature for 10 minutes before using a knife or pizza cutter to divide it into bars. Put it in the freezer or fridge to let it harden, take out and enjoy! Don't be surprised when these disappear quickly.
