What the Baby Mermaid Eats: Mini Avocado Sandwiches

Since so many parents enjoyed the last recipe I shared I thought I could put together another one. Be forewarned they get slightly messy but such is how it goes with meal time and little ones. =)




Ingredients
one whole grain slice of bread
one avocado, halved.
pinch of pepper
tablespoon of plain yogurt

Mash up half of an avocado and mix it with the yogurt. Spread on the bread and then fold. Cut it into six pieces and you have a quick healthy lunch option that is just the right size for little hands to self-serve.


As you can see, Rosie is a fan.
