What the Baby Mermaid Eats: Blackberry Kale Smoothie
Rosie has become a little blackberry fiend and I've been trying to come up with new ways to feed them to her along with other fruits and veggies.
Ingredients (1 serving)
-handful of blackberries
-splash of pomegranate juice
-1/4 cup of ice
- handful of fresh kale
- 1 banana
- tsp of flaxseeds
optional
- cup of yogurt
Use a blender and mix them altogether, adding the flaxseeds last. The kale provides a huge boost of vitamin c and the flaxseeds are a good source of fiber. This smoothie was a hit with the baby mermaid today, so much so that I didn't even get a chance to take a picture of the first batch let alone have more than a few sips myself! The ingredient list above will make enough for one glass. I recommend chopping up the kale before adding it to the mix.
I will try to get a picture of the delicious smoothie when I can!
